Cheesy Vegetable Bake

Yield: 6-8 servings

Ingredients

  • 2 cups sliced carrots
  • 3 cups broccoli
  • 2 cups cauliflower
  • 1 cup sliced zucchini
  • 1 cup sliced yellow summer squash
  • 1 cup sliced mushrooms
  • ½ cup chopped onions
  • ½ cup butter or margarine
  • 1 can creamy chicken mushroom soup
  • 8 oz processed American cheese
  • 1 cup bread crumbs (I like to use the Pepperidge Farm seasoned dressing mix for the bread crumbs)
  • 2 tbsp butter or margarine

Instructions

Preheat oven 350°

  1. Cook vegetables and set aside.
  2. Combine butter, soup, and cheese in a medium saucepan. Heat until melted.
  3. Mix bread crumbs and melted margarine or butter. Layer vegetables into a 9x13 baking dish and pour cheese sauce on top, sprinkle with bread crumbs.
  4. Bake for 15-20 min or until bubbly.
